That should work fine, with one tiny correction. For this to work, the proper moment to activate Overtaker would be in the declare attackers step.
The first thing done in the declare blockers step is the declaring of blockers, after which players get the opportunity to cast spells/activate abilities. While you can still use Overtaker then, blockers have already been declared, so your newly stolen creature wouldn't have a chance to block.
The declare attackers step is mostly the same as the declare blockers step: Attackers are declared, then players get the chance to use spells/abilties before moving on to the declare blockers step. Just activate Overtaker after attackers are declared.
hmm a question on this one:
- battle step, declaring attackers player chooses 2 monsters to attack and taps them to show they're attacking
- in reaction (declare blockers step) player 2 uses the effect of overtaker to capture and untap 1 of the attackers (since it's converted and now owned by the other player it should be removed from combat?
- still in the declare blockers step, player 2 would like to use the converted monsterto defend against the other attacking monster
is this possible or did i make a mistake somewhere?

3U, T, Discard a card: Untap target creature and gain control of it until end of turn. That creature gains haste until end of turn.
